Dining
Since we recently increased our capacity to meet demand we’ve more space for smaller and larger parties alike, and are still taking bookings throughout December. We offer set menus for larger groups, which have proved incredibly popular since they were introduced. If you’d like to make a reservation please contact our host team. As there’s so much demand for our regular dishes – including our recently refreshed autumn menu – we’re not offering a specific Christmas menu, but look out for specials in the ground floor bar as well as the restaurant.
Drinks
Adding a touch of seasonal spice with a Spanish theme, we’ve been serving mulled sangria since the beginning of the week – something which has proved a welcome winter warmer for customers stepping into our ground floor bar off the street! Look out for some very special festive cocktails upstairs in The Black Cat too.
Christmas presents
If you’re looking for a perfect present, why not purchase one of our gift cards? They’re the tastiest gift option around and whether the recipient’s dined with us or not, we’re sure they’ll be gratefully received!
I used to make sabayon as a special in our old restaurant in Yorkshire: it was always popular with customers and sold out in a flash. Sabayons are great because they’re quick and easy desserts to make and you can can tailor them to whatever is in season. As a result they’re a bit of a chef’s secret weapon!
The start of September is one of my favourite times of the year: we’re spoiled with an abundance of great produce both in the shops and the hedgerows. This recipe takes advantage of the late summer / autumn fruits which you can easily buy right now. It’s also a great way of using up a little left-over white wine or fizz in the bottom of a bottle.
Autumn fruit sabayon
Serves 4
Ingredients
For the fruit
- 2 tangerines
- 4 figs
- 1 punnet blackberries
- 2 pears
- 1 punnet blueberries
For the sabayon
- 4 medium egg yolks
- 75g caster sugar
- 150ml white wine (dry is preferred, but this is a good way to use up any white or sparkling wine)
- 150ml lightly whipped double cream
- Spring of mint and icing sugar to garnish
Method
Wash and prepare fruit. Quarter the figs, halve the pears and segment the tangerines. Place to one side at room temperature.
Whisk the egg yolks, sugar and white wine in a metal bowl over a pan of boiling water until the mixture thickens to ribbon stage.
Remove from heat and whisk until cool. Fold in whipped cream, taking care not to over-whisk or the mix will revert to liquid. (Cook’s note: this mix will keep covered in the fridge for up to 5 days)
Place fruit in serving dish and gently top with the sabayon. Garnish with a sprig of mint, dust with icing sugar (optional) and serve.
We want to take this opportunity to wish you – as well as those closest to you – a very Merry Christmas and a Happy New Year!
Thanks for all your support and patience over the past year; we can’t wait to welcome you to our new Manchester home very soon. It’s been a thrilling year… so as it draws to a close we can share a little more on what you can expect to enjoy when we open our doors in February 2016!
When you step inside from King Street you’ll see our charcuterie bar – the perfect spot for matching a brilliant drinks selection with some small dishes. On the first floor is the main restaurant dining area, centred around the open plan kitchen where you’ll be able to watch chefs at work. The seasonally-focused menu features old favourites and new dishes, including a new chargrilled section based around our Josper grill. Meanwhile the top floor cocktail bar will enable visitors to enjoy an exclusive selection of Spanish-influenced cocktails and a comprehensive array of drinks. You’ll be able to soak up the atmosphere, and even take advantage of the retractable roof we’ve installed to make the most of sunny days and starry nights. We don’t think Manchester will have seen anything quite like it before!
The building is coming together nicely: we’ve been making good progress despite some challenging weather conditions over the last couple of months which kept our talented contractors on their toes! We always knew we wanted to launch at the right time and make sure everything was just right, so we’re glad we made a conscious decision not to rush for the sake of it.
Simon says
“We were always aware moving to Manchester and bringing our ideas to life was going to be a lot of work this year! It’s certainly meant plenty of graft and long hours, but that’s been made easier working with a great team of professionals who share the same passion and drive. A big thanks to all our suppliers, contractors, partners, friends and advocates for all your support and hard work this year. It’s been incredibly exciting and it’s thanks to you we’re about to open somewhere very special. So on behalf of everyone on the management team, we’ll raise a glass and hope you all have a restful, relaxed and brilliant Christmas break!”
